Baby, It's Cold Outside...A hearty stew will cure what ails you......... 
 This is the perfect after shopping on a cold day meal.
Braised Beef Vegetable Stew (Turkey)

Ingredients:
1 ½ lbs boneless beef chuck (diced into one-inch cubes)
4-5 red potatoes cut in quarters
1 large onion (or 2 medium onions)
2 large garlic cloves
1 can diced tomatoes, include liquid
1 1/2 cans beef broth (approx. 20 oz.)
2 cups winter squash peeled, diced
1 cup baby cauliflower chopped
3 tbsp vegetable oil
1 tsp salt
½ tsp pepper
1 tsp oregano

Directions:
In a large skillet, heat 2 tbsp of the vegetable oil over high heat. Sear beef 10 minutes, turning after 2 minutes, until all sides are brown. Remove from heat and set aside. (If you use cooked turkey skip this step)
In a large stockpot, heat 1 tbsp oil over medium high heat. Sauté onions, garlic, salt, pepper, and oregano until onions are tender. Add tomatoes, broth and beef. Bring to a boil. Simmer for 90 minutes, then add cauliflower and simmer for another 20 minutes. Add squash and potatoes, and simmer another 20 minutes or until the vegetables are tender.

Serve with your favorite crusty bread or sprinkle cheese over the top. Freeze or refrigerate remaining portions within 2 hours.

 Note:  I haven't tried this yet; but I would use up some left over turkey in this recipie.  Use turkey instead of beef and chicken broth instead of beef broth. That sounds great to me.  I'm going to give it a try!
