Frugal Food - 10 Food Basics Every Kitchen Must Have

Food costs are up - even on the basics we all rely on to prepare good, basic meals for our families. What can we do? Instead of relying on too many processed foods, rely on these good basic meal makers to create delicious and nutritious meals - that won't break the bank.

1. Rice - in all its forms! Brown rice, white rice, short grain rice. I love the nutritional value of brown rice, even though it does cost more per serving. You can use rice to create countless main dishes, including casseroles, or use plain rice as a base and different sauces - think sweet and sour chicken, or mushroom meatballs - over top. Also, rice is a handy substitute hot cereal, or can be made into deliciously creamy rice pudding.

2.Beans - beans, beans, a musical fruit...does anyone else remember that silly little bean song? :) Beans may make your belly more 'musical', but they're downright healthy and good for you! Combine rice and beans for an ultra frugal meal, or try using cooked black beans in brownies - no kidding! Search the 'net for black bean brownies recipes -- they're healthier, and they taste amazingly good.
3.Oats - I love oatmeal for breakfast, and I even whir up some oats in the blender to create oat flour, which has more nutrition than plain white flour. Add oats to ground meats to make them go farther, without alterting the taste, but meanwhile upping the nutritional value and the fiber.
4.Frozen fruit - Sometimes buying bags of pre-frozen fruit can be expensive, so buy when on sale or freeze your own fruit. Bananas gone bad? Cut into thick chunks and store in a plastic baggie and freeze - it's perfect to go into a smoothie! Or, when berries are on sale, freeze strawberries, blueberries, blackberries or whatever type you found and use in cakes, muffins, pancakes or more smoothies. (Can you TELL that I enjoy a smoothie or two? :) )
5.Frozen veggies - again, stock up when they're on sale. I love that they won't go bad, unlike the fresh vegetables that will go funny if you don't use them quickly enough. Good in stirfries, or in soups, or on the side of any dinner entree.
6.Buckwheat flour - I can't eat regular wheat flour, but did you know that buckwheat flour is gluten free? It's delicious, regardless, and if you buy it in a big sack you can get a much better bargain. It is absolutely scrumptious in homemade pancakes, and works well in just about any cake or muffin recipe - there's fiber and protein in it, so it's good for you.
7.Eggs - oh, how I love a dozen eggs! They're one food, however, that I don't mind paying a little more for to get a nicer quality. For instance - you can get free range or free run eggs, or the type enriched with Omega 3 oils - usually that just means that the chickens were fed flax seeds. Eggs are delicious whipped up into fluffy omelets filled with fresh veggies and cheese, or as a dip for French Toast- a wonderful Sunday morning breakfast.
8.Ground beef, or veggie 'ground beef' - either way, this is a great way to make your meat (or 'meat' in the case of veggie ground round) stretch further. Terriffic in pasta sauces, casseroles, soups and stews. Again, buy on sale and freeze. Also, obviously wonderful as burgers. Veggie ground round, if you haven't tried it, is surprisingly yummy - oh, and a good substitute for vegetarians in Mexican foods like tacos. Yummm...now I'm craving a good taco.
9.Chicken - but only if you aren't hooked on skinless, boneless chicken breasts alone! Nothing wrong with stocking up on those when they're on sale and freezing (since they are quick and easy to add to stir fries and other quick meals) but...in general chicken parts with the skin and bone are much cheaper. Chicken legs, for instance, tend to be a very good deal - a chicken leg includes the thigh and drumstick. 10.Breakfast for Supper - Pancakes, homemade waffles (or frozen), scrambled eggs and toast, bacon and eggs - all of these are not exactly a specific food, but rather a type of food we think of for breakfast. This makes a far cheaper dinner than usual, since the emphasis isn't on meat.  Source: Frugalites.com

 Chicken Caesar Salad

Serves: 2

Cooking Time: 10 min

Ingredients

• ¹/4 cup Italian-flavored bread crumbs
• 1 (1.2-ounce) package dry Caesar dressing mix, divided
• 1 egg, beaten
• 2 boneless, skinless chicken breast halves (½ to ¾ pound total), pounded to ¼-inch thickness
• ¹/4 cup plus 2 tablespoons olive oil, divided
• 3 tablespoons white vinegar
• ¹/2 head romaine lettuce, cut into bite-sized pieces
• 1 tablespoon shredded Parmesan cheese

Instructions

1. In a shallow dish, combine bread crumbs and 2 tablespoons Caesar dressing mix; mix well. Place egg in another shallow dish. Dip chicken in egg then in the bread crumb mixture, coating completely.
    
2. Heat 2 tablespoons oil in a large skillet over medium-high heat. Add chicken and cook 3 to 4 minutes per side, or until golden.
    
3. Meanwhile, in a small bowl, whisk vinegar and the remaining Caesar dressing mix and 1/4 cup oil; mix well. Toss with romaine lettuce then place on a platter, top with chicken, and sprinkle with Parmesan cheese. Serve immediately.

 Doubles! Doubles and more Doubles!

Well, it looks like select Kmart locations are at it again with another round of doubles  now and running through 7/30! Select Kmart’s are doubling coupons up to $0.99 – which means you could possibly get a total of $1.98 off one product… but not likely considering I’ve never seen a $0.99 coupon.
To find out if your store is participating, I would recommend looking at at the weekly ad online here. On page 11 of my weekly ad it states that they are doubling coupons up to $0.99… so I am assuming if your store is in fact doubling, you’ll have something similar stated in your local ad. Please note that I would NOT recommend calling your local store and asking as most cashiers and even managers are sometimes clueless that they are in fact doubling coupons.

Many use Twitter to give quick updates to friends and family. They share a small part of their day or say they're running late. Others use it to promote their business. Let's take a look at ways you can make the most of Twitter.
Hashtags
With millions sent each hour, messages can be difficult to follow. Hashtags help you overcome this. Just place a hashtag (#) directly before relevant keywords or topics. For example, you could use #computer or #job. This will help others find your tweets.

When you see a hashtag in a tweet, click it. This brings up other messages on the topic. Just remember to check how others are using a particular hashtag before using it. Some have embarrassed themselves by using a trending hashtag incorrectly. Replies You'll want to reply to others' tweets. Just find a message and click Reply. Enter your message and click Tweet. Replies start with @username. When you see your username, someone is replying to you. Click the tweet to see the original tweet, along with other information.  You can also insert @username to mention someone in a tweet. Mentions appear on the Mentions tab. This helps you see who is talking about you. To search for mentions on others, use @username in the search box. Mentions are a great way to build followers. Maybe you want to share a funny or important tweet with your followers. This is easy to do. Just click Retweet below a tweet to share it. Retweeting is a nice way to let others know you appreciate their tweets.Retweets are easy to spot in the Timeline. You'll see the retweet icon, along with the username beside the tweet. Still, it is considerate to acknowledge the original tweeter in the message. Precede the message with "RT @username." Retweets Maybe you want to share a funny or important tweet with your followers. This is easy to do. Just click Retweet below a tweet to share it. Retweeting is a nice way to let others know you appreciate their tweets.Retweets are easy to spot in the Timeline. When you follow someone, their tweets appear in your Timeline. If you follow many people, lists will help you organize your messages. For example, group coworkers or school friends together. You can then scan related messages easily. To create a list, visit a user's profile. Click the person icon. On the Actions menu that appears, click "Add to list." Enter the information for the list and choose public or private. The user is added to the list. Add others by following these steps and selecting an existing list.
