I hope you live in a tax free weekend state. I wish I did. One year I timed my vacation to Florida on just the right weekend; there were great sales and no tax, I was on a buying high.. Back to school clothes for the grand kids and summer clothes for me. Enjoy yourselves and think of me while you shop, right. Just save, save, save is all I ask.

It’s about that time when a lot of states start having tax free weekends to get ready for school. Here is a list of the states I know about.

Florida – August 12 to 14
Illinois – August 6 to 15
Iowa – August 5 to 6
Maryland – August 14 to 20
Mississippi – July 29 to 30
Missouri State -August 5 to 7

North Carolina – August 5 to 7
Oklahoma – August 5 to 7
South Carolina – August 5 to 7

Chicken Fricassee
1 lb. chicken drumsticks
1 Tbsp. adobo seasoning
1/2 (.18 oz) packet sazon seasoning
1/2 tsp. salt
5 large red potatoes, peeled and thickly sliced
1 large red bell pepper, seeded and chopped
1 large green bell pepper, seeded and chopped
1 large onion, chopped
1 tsp. Garlic Powder
1 bunch fresh cilantro, chopped
2 Tbsp. olive oil
1/2 cup cooking wine
1 tsp. ground cumin
1 tsp. dried oregano
2 fresh or dried bay leaves

Methods/steps

1.Wash the chicken and pat dry; place into a large bowl. Season with adobo seasoning, sazon seasoning, and salt. Place the legs into a slow cooker, and cover with the potato slices.
2.Puree the red pepper, green pepper, onion, cilantro, olive oil, wine, garlic powder, cumin, and oregano in a blender. Pour over the chicken and add the bay leaves.
3.Cook on Low for 6 to 8 hours, until the chicken is easily removed from the bone.
